I have had great success in losing weight with the Slow Carb Diet. I have a few recipes that I use quite frequently so they HAVE to be good!

222 Slaw

I really like a good slaw. Store-bought slaw just never has appealed to me. Most (all?) slaw  that you get at stores and restaurants have sugar or worse, high fructose corn syrup. This slaw is easy and delicious. It is a little better with a bit of refrigerator time. What is so great about this is that you are consuming raw cabbage which is highly nutritious and beneficial.

Mix all of the ingredients together in a glass or plastic bowl except for the cabbage. Add cabbage and stir/toss well. Refrigerate until served.

Chicken Barbecue

I love pulled pork barbecue and my favorite is Stamey’s Barbecue in Greensboro, NC. But Stamey’s is for Cheat Day since I love all the fixings that go with it. Pulled pork is fine for the slow carb diet but having to cook a whole butt wasn’t practical or as good as Stamey’s. So what do you do? In walks boneless, skinless chicken thighs. I have had trouble integrating chicken thighs into my diet. The consistency of the meat just got to me (is it just me?). Alas I found a wonderfully delicious way to cook chicken thighs – hickory smoked on my Weber charcoal grill! All right, enough of the chi-chat. I’m hungry!

Lightly sprinkle butt rub on both sides of chicken thighs. Have hot charcoal to 1/3 side of grill. Spread chicken thighs outside down on grill. Add hickory chips. Cover grill with lid. Have both vents open. Cook for 45 minutes then flip thighs. Cook until desired temperature. I like 180 degrees internal or better.

Allow the thighs to cool to handling temperature once removed from the grill. Chop/dice each thigh and enjoy with you favorite sauce!

Easy “Vinegar-Based” Barbecue Sauce

Easy and amazingly good. Just combine apple cider vinegar and Frank’s hot sauce. I usually sprinkle on the hot sauce on whatever meat I am eating and the following it up with apple cider vinegar.
